Ingredients

Olive oil

6 cloves garlic

1 bunch fresh thyme

2 eggplants

2 large or 4 small zucchini

5 big juicy tomatoes

1 to 2 tsp salt

1 bunch oregano

Parsley for garnish

Pepper to taste

This recipe doesn’t contain enough protein so I serve it with:
