If Deadpool revealed the truth about Loki's survival, only to go on and tell Thor that his brother will never be able to see him again due to his new role as the eternal guardian of the timeline, it could be devastating for the hero. While he may be overjoyed to know his brother is alive, he would also understand that there is nothing he can do, and it may simply mean that he could never see his brother again. That would be enough to tip the scales and create the emotional moment featured in the film.

With this in mind, it is possible to think that Paradox set the moment up as a way to try and manipulate Deadpool to do his bidding. With numerous variants falling into the void all the time, a Thor and Deadpool variant could have been hired to play the role, or Paradox could have used some other TVA tech to change what happened.
Paradox is a liar, who actively says and does anything to get what he wants. However, he is also lacking in any kind of conviction or principles. Paradox did get punished for his crimes against the TVA, and during his time served, he may have admitted to creating false videos in an effort to sway Wade.
